What sets Yuan apart from any other bar in the world is its holistic emphasis on the use of Chinese elements throughout its Xiangyang Beilu space, from its logo which is in the form of a traditional Chinese paper cutting
Its cocktail menu reads like a Chinese herbal store, with the use of local liquors, herbs and fruits. This original idea all came from the brilliant owner of Yuan, who is also one of the most famous Sommelier A prime example is its Shaoxing Chivalry that is a twist of a Manhattan. Instead of Bourbon, 12-year-old Chivas is infused with red dates while a Shaoxing wine reduction with wolfberry substitutes vermouth and then topped with orange bitters in this Chinese rendition of a classic cocktail. Other creative concoctions include the use of Changbaishan Ginseng, Chongming Wine and Hawthorne. Each cocktail is meticulously conjured up and executed by its award-winning bartenders – all of whom are regular winners in the cocktail competition circuit.
Incorporated into Yuan is a dedicated oyster bar where more than ten imported varietals (mainly from France) including Belon, Gillardeau, Fine de Claire, and Kumamoto can be handpicked by guests, shucked a la minute by waiters and served tableside, minutes from its order.While a service one can find in high-end restaurants, Yuan is the only cocktail bar that provides premium oysters to complement its 300 spirits and wines that it stocks behind its counters. However, comparing with other high-end restaurants, the price of oysters in Yuan is only the half and even lower. The set of “Champaign Oyster “(158RMB) composed of three small cocktails - Oyster Bloody Mary, Oyster Royal Fizz and Oyster Martini which are meticulously made by the award-winning bartenders, was highly recommended. Alongside, every Wednesday night is the “Night of Oyster”. During that night, one free cocktail will be severed if you order two. Nevertheless, please noted, if you intend to join the ‘Night of Oyster’, do make a reservation in advance, as the supply always fall short of demand on that night.
